Mr. Fuzby's friend and Steadicam operator Nicholas is from Nancy, France although he now lives near Warner Hollywood. On a recent trip home he stopped in Paris and brought us back a box of Ladurée macarons!

Each macaron consists of two light shells filled with rich ganache. The pastry chefs measure out the required amounts of almonds, eggs and sugar. Once cooked and filled, the macaroons are put to one side for 2 days before going on sale, the time it takes to achieve a balance between texture and flavour, according the the official site.

There are 20 or so different flavours and a new one is introduced each year. This year it's Gingerbread. The standard flavours include Chocolate, Bitter chocolate, Vanilla, Coffee, Hazelnut praline, Rose petal, Pistachio, Raspberry, Lemon, Blackcurrant violet, Salted butter Caramel, Morello cherry and Amaretto.

Seasonal flavours range from Coconut, Lime Basil, and Icy mint in the Summer to Chestnut, Orange, Almond and Liquorice in the Winter. There are also special and temporary creations such as Apricot Ginger, Muscovado, Candyfloss, Havana (could this be tabacco flavoured or coffee and rum?), White amber, Indian Rose, Aniseed, Champagne, Orange Saffron, Lily-of-the-valley and Strawberry Poppy.
